Zucchini Flan, new linen and first pansy.

Our "guest" room has new linen.

I love pansies.

I am still picking zucchinis. Just made a Zucchini Flan.

1 sheet reduced fat puff pastry
2 to 3 small zucchinis
1/2 cup milk
2/3 cup grated cheeses
two tablespoons chopped fresh parsley
sprinkle of onion flakes
salt and pepper
5 eggs

Grate most of the zucchini and let sit for five minutes and then squeeze water from grated zucchini. Slice a small amount of zucchini in very thin slices to place on top of flan.

Whisk eggs and milk. Add cheese, onion flakes, parsley and zucchini, salt and pepper.
Cut pastry sheet to fit pie dish. Gently pour mixture on top of pastry and place sliced zucchini on top. Bake in a preheated 200 degree celcius oven for 35 to 40 minutes or until pastry is cooked and zucchini mixture has set.
